It is a white firm and compact mushroom with a strong smell. The hat of a young has the edge rolled inward, then is convex and finally flat, matt whitish creamy colour. The foot is whitish, sometimes short, central and cylindrical; despite it has often a thick base. The layers are white when it is young, and a little more cream when the mushroom is ripe. Time of the year: from April to June, according to the altitude. Habitat: mountain meadowlands. It is recommended with omelettes, scrambled eggs and risottos.
